You all remember the Pizza Dip that I made for my last Make Your Own Happy Hour Adventure, right? Well, I had quite a few leftover ingredients from that Adventure and I was not going to let it all go to waste. So that is when the wheels started turning in my head trying to figure out what my next creation could be.

A couple of new ingredients have been brought into the mix for the appetizer I plan on making for this Adventure. We have a jalapeño to bring forth the heat and some buttermilk biscuits to hold everything together.

3 Ingredient Cocktail

But as always let’s shake up a cocktail for us to enjoy while we get to cooking. I pulled out another cocktail from the Ultimate Bar Book that I got for Christmas. Again I just went looking through the book and found a cocktail to craft with ingredients I already had lying around the house. Luckily for me, I found the perfect concoction to whip up using cranberry juice, pineapple juice, and vodka.

  • 1.5 oz Vodka

  • 1 oz Cranberry Juice

  • 4 oz Pineapple Juice

Sure this may not the booziest drink I’ve made on my many Make Your Own Happy Hour Adventures but it does check off the box of being tropical. You know that I’m always a fan of any drink with a little bit of pineapple juice in it. Although this steers away from the typical sugar-based rum and more towards the classic vodka. This for sure is a drink that you may not feel the booze right away but if you have enough of them then they can sneak up on you. So technically this drink is meant to be stirred and not shaken but I love the frothiness that comes up when you shake pineapple juice. Plus it adds a little extra pizzaz of having that frothy top instead of it all being one color. Overall a perfect simple cocktail that is perfect for anyone that doesn’t care for the taste of booze.

Jalapeño Cream Cheese Filling

As a warning, I was not going off of a recipe to create this dish. Part of the inspiration came from these Pizza Bites that my roommate and I had ordered after our water heater started spewing water. We didn’t want to do any cooking after dealing with all of that. But I digress, so these pizza bites had cream cheese in them so I decided to create a jalapeño-inspired cream cheese filling for my version. You will combine all the ingredients you see below until evenly distributed throughout. I also seasoned with a little bit of salt, pepper, and garlic powder.

  • 1.5 chopped fresh jalapeños (seeds removed)

  • 4 oz cream cheese (softened)

  • 1 cup of mozzarella cheese

  • ⅓ cup of parmesan cheese

Pizza Bites, Assemble!

The buttermilk biscuits are the key here because they will be what helps blanket all of our ingredients into one delicious pillow of pizza flavor. I chopped each biscuit in half to double the number of pizza bites I could have. I place 1 and a half pepperoni slices on each of the biscuits. Then I took maybe a tablespoon or less of the Jalepeño Cream Cheese filling and placed it in the center. My original plan was to also put the pizza sauce in the bites as well but I didn’t want to overload each bite with too many ingredients and risk the bites coming apart. So I took the safe route and ended it there. I wrapped the sides of the biscuit on top of the filling to make sure nothing would escape the grasps of the biscuit.

We have the bites all wrapped up but we are going to need to make something to top these bundles of joy. I decided I’d make a garlic butter spread to coat the top of each of the jalapeño popper pizza bites. So my original idea was I was going to coat the bites with the butter coating after I got them out of the oven. But then I realized I wanted the garlic butter to cook into each of the bites so I diverged from the original plan.

So instead of putting parsley into the butter sauce, I put in some grated parmesan cheese to get some extra cheesiness into the bites. I probably should have written it down but I have no idea how much of each ingredient I used. I’m going to list the amounts below but don’t hold me to them.

  • A quarter stick of butter

  • 3 cloves of garlic

  • 4 tablespoons of parmesan cheese

  • Italian seasoning

Now for the most magical part, we have all been waiting for. A slathering of garlic butter all over the surface of each pizza bite. It’s such a beautiful image when you see so much garlic butter on the surface of any food. But I think when it is being used for pizza bites the experience is even more magical.

Jalapeño Popper Pizza Bites

There you have it a plateful of jalapeño popper pizza bites with a side of ranch dressing and pizza sauce for your dipping pleasure. I meant to throw on a little bit of parsley to add a little touch of color. But after having the whole house filled with the aroma of garlic and pizza do you blame me for diving into these pizza bites right away? Just staring at this picture I’m just drooling and dreaming of the day when I can make these again.

The Glorious Inside

Look at the little pepperoni just sticking out calling for me to gobble it up. But the most important part is seeing the jalapeño cream cheese filling oozing out in all of its cheesy glory. As I take a bite the explosion of spicy cheese comes cascading into my mouth. Then the notes of pepperoni come in adding some delicious protein to the mix. But it’s that garlic butter coating that hits the roof of your mouth to bring on the tastes of garlic bread. The biscuit exterior was fluffy and buttery as well and added a great richness to the whole dish. I think I would try to roll out the biscuit dough out a little more to make it slightly less bready. Overall I could have just kept eating and eating platefuls of these jalepeño popper pizza bites if my stomach allowed me. But I also made sure I was good and not eat all 10 of the bites. I only ate 6 while saving the rest for a snack the next day for work.

So that was my attempt at coming up with something entirely from scratch. I mean it wasn’t my first attempt if you remember my Unplanned Happy Hour Adventure where I made air-fried chicken taquitos. I felt this was a little more creative than that one and certainly more delicious. Although I’m not knocking taquitos because they are delicious, however, I think in this round the jalapeño popper pizza bites take the gold.

  1. Hmmm… childhood snacks make me think of chicken nuggets, fish sticks, pudding cups, frozen corn dogs, maybe goldfish crackers and fruit snacks (most of which I still proudly eat as an adult). Any of those you think you could happy-hour elevate? Lol maybe you could do pudding shots or something.

  2. I'm sure I could do some sort of pudding shot for the drink or just incorporate pudding to be a dessert type cocktail. Not sure how I could elevate them but I would like to make corn dogs from scratch. That would be fun!
