Lazy Southern Adventure: Home Sweet Home

We made it through 2020 and are now officially in 2021! Just because it’s a brand new year doesn’t mean everything from the past year doesn’t just disappear though. We still have a long ways to go but I hope to shine some happiness in your lives with some Happy Hour Adventures! This may be my first post for 2021 but it isn’t my first official Adventure that I’ve had in 2021. It’ll be a while before that but for now, I hope you enjoy this edition of a lazy Make Your Own Happy Hour Adventure.

Trader Joe’s Seasonal Item

All of my lazy Happy Hour Adventures have been items from Trader Joe’s and this Adventure is no exception. The thing I enjoy about Trader Joe’s is the fact that they have seasonal items and when I saw this item I just had to grab it! You may remember the very first time a grabbed something from the frozen section with the Pastry Bites. However, my very first Lazy Happy Hour Adventure ever was a charcuterie board.

An egg?

Well unfortunately I don’t have a Southern drink to pair with the food for this Adventure but it’s an old-school drink just like Southern cuisine. Your eyes are not deceiving you because that is an actual egg you are seeing. The use of egg whites was very common back when cocktails were first starting to become a thing. Egg whites help to bring a nice frothiness to the drink which allows for a wonderful texture.

Gin Sour

  • 2 oz gin

  • .75 oz lemon juice

  • .75 oz simple syrup

  • .5 oz egg white

Gin Sour

It is important to shake the ingredients vigorously without ice for 15 seconds. It gives you a great little workout which if you are having a drink it is always good to work off those calories. Then you can throw in the ice because we definitely want to be drinking an ice-cold drink. For added measures pour your concoction into a frosty glass. The simplicity of this drink is what makes it so amazing! The sweetness of the simple syrup to the tartness of the lemon juice. These combinations create a well-balanced drink. The one thing I do have to say is that it is tough to measure out the egg whites because of the viscosity of the egg.

Cornbread Bites

When I saw these cornbread bites I knew the only way I was going to be cooking up these golden beauties was in my air fryer. The outside of these spheres is of course that sweet cornbread that is found throughout the south. They give it a Southwestern twist with the filling of oh so gooey pepper jack cheese and a punch of serrano chiles.

Gooey Cheese

One surprise for me when I first broke this cornbread bite was that they had kernels of corn hiding inside as well! This helped bring the corn flavor in two ways with the cornbread and fresh bursts of corn. My favorite was the bubbling cheese inside because pepper jack is one of my all-time favorite cheeses. Overall this has probably been one of my favorite items from Trader Joe’s.
