I decided that I would go a different route in a Make Your Own Happy Hour with a healthier twist. Well, I guess a semi-healthy twist since this does involve a breading component to it. But hey you gotta have a little bit of unhealthiness when it comes to Happy Hours. Because after all, we are having drinks with it.

Zucchini Sticks

Yes, your eyes do not fool you, those are zucchini that you are looking at. I do have to say that zucchini is one of my favorite vegetables if it is prepared correctly. I love zucchini most when they are roasted in the oven with olive oil and some seasoning. It truly is perfection.

Ingredients for a Famous Cocktail

As I’ve said many times before we must get our drink on first. Any guesses on what drink I will be making with these ingredients? The key ingredient here is the cranberry juice. Another hint is that it is a famous cocktail from a certain tv series.

Orange Zest and Sugar

While you think about the answer I decided to create a unique rim for this cocktail. You’ve seen the typical sugar rims that I have made before but this time I decided to add a little bit of orange zest. This will help expand upon the orange flavor of the L’Orange Grey Goose Vodka.

Cosmopolitan

Well for those of you that either knows your cocktail ingredients or have seen Sex and the City then your guess would have been a Cosmopolitan. It truly is a well-balanced cocktail when you have the tartness coming from the cranberry and lime juice. Then you get the sweetness coming in from the simple syrup and Cointreau. Using an orange-flavored vodka brings a unique twist to this classic cocktail than your traditional vodka. This is a Cosmo that involves some top-shelf ingredients which improve the taste exponentially.

Ingredients ready to go

When you saw the zucchini all cut up earlier did you have any guesses as what I could be making? Well maybe now that you see the rest of the ingredients you may have an idea now. In this Make Your Own Happy Hour Adventure we are whipping up some zucchini fries.

Grated Parmesan

The breading portion of this recipe involves grated parmesan cheese which is kind of pricey. I didn’t want to spend a lot of money on an ingredient that I only needed for one purpose. So I did find a pretty good price on some parmesan cheese shavings for a couple of dollars cheaper. So I decided to use my trusty blender to grate the cheese in a much quicker fashion. To my surprise, it turned out quite well.

Coating Station

For this coating process, the first bowl is going to involve an egg as your adhesive agent. Then you will combine that grated parmesan with some panko breading and mix thoroughly. Now with those cut zucchini slices that mimic fries, it is time to dip in the egg and then the breading.

Zucchini Fries

Now that we have them all coated it is time to throw them in the oven at 425 degrees for 15 to 20 minutes. I cooked them for 15 minutes and finished them off in the air fryer to get a little extra crispiness on them.

Jalapeño Ranch

While those zucchini fries are cooking let us get our sauce ready. When I said while cooking I mean the last minute of cooking because we are taking the easy road. I found a good deal on some jalapeño ranch and we all know that ranch makes all veggies taste even better.

Zucchini Fries

I tried to go a little playful with my plating by stacking them Jenga style. Although I wouldn’t try playing Jenga with these or you might get yelled at for playing with your food. I was able to get the perfect crispness on the outside of the zucchini fries which I think is essential.

Dip Pic

With a classic dip in some jalapeño ranch, one can add some creamy and spiciness to each bite. I do wish the zucchini was a little more tender on the inside. I think if I had cut the zucchini in slightly smaller strips I would have had the perfect zucchini fries.

I know for the most part when someone goes out for Happy Hours they aren’t expecting to eat healthily. But when you think about it when you have something healthy then it just means an extra drink.

  1. I absolutely love any kind of breaded veggie. Zucchini, green bean fries, tempura veggies, anything like that. I love an appetizer of a healthy veggie made less healthy, lol
