I decided to have another Make Your Own Happy Hour Adventure on this particular Saturday. I do apologize for the terrible pun in the title but it had to be done since that is what this Happy Hour is all about. However, we have to give it that special OC Happy Hour Adventures twist.


Nachos, but what kind?


Just look at those delectable nachos. Can’t you just hear them calling your name wanting to be devoured? But I think we are getting just a tad bit ahead of ourselves. I bet you want to know how to make these appetizing chips with a scattering of distinct garnishes.


Coating the tortilla with Olive Oil


Here on OC Happy Hour Adventures, it’s all about making things from scratch to the best of our abilities. Of course, you all know how much I love my air fryer, so I decided to make air-fried tortilla chips! First, grab a pack of your number one choice of tortillas. I prefer a nice corn tortilla myself, but hey, it is a Make Your Own Happy Hour Adventure after all. Pour some olive oil in a bowl or glass or anything that allows you to easily dip a food brush into. You’ll want to coat both sides of the tortilla with that olive oil.


Gotta have Seasoning!


Now for the seasoning because who wants a bland tortilla chip, yuck? I decided to go with some pepper, sea salt, and chili powder blend. You know I gotta have that kick in my food. Mix it a bit, so that it is all blended together throughout. Then it is time to sprinkle your own homemade tortilla chip seasoning all over the tortilla.


Ready for the air fryer


Now that they are seasoned it is time to get to the chopping block. But don’t worry Chopped fans I just meant the cutting board, the challenge is still on. It is very important to get that perfect sized tortilla chip to be able to handle all of the savory toppings that you pile on. For me, cutting it into sixths was the preferable size. But it is all dependent on what tortillas you are using, so use your best judgment.


Air-fried Tortilla Chips


Now it is in the air fryer these cut tortillas go! Make sure to spread them evenly across, so that they are not overlapping one another in the air fryer. Set it at 350 degrees Fahrenheit and let them cook for 8 minutes. Check halfway through and maybe give them a bit of a shakeup to make sure they cook evenly. There you have it! A perfectly golden tortilla chip just waiting for luscious toppings to be thrown on.


Cherry Tomatoes and Jalapeños

It will take a while to get enough tortilla chips made for your nachos, so while those are cooking let’s work on the toppings. I decided to roast up a blend of jalapeños and cherry tomatoes. Sprinkle a bit of olive oil, salt, pepper, and garlic powder to add a bit more flavor to these veggies, technically fruit.

After roasting them in the oven at 375 degrees Fahrenheit for 20-25 minutes they will come out with a touch more color. Plus that lovely roasted texture with the tomatoes and jalepeños wrinkling up.




You can pick whatever protein your heart decides for this dish. But I figured I’d do something a little more unique, chorizo! I sure do love chorizo. It has that wonderful spicy blend throughout the pork. Just throw it in a pan and cook it up till it is cooked through.


Spicy Sour Cream Sauce


Nachos can’t be complete without some sort of sauce to top it all off. Using some very, very, very spicy hot sauce gifted to me by my mom, thanks mom, I decided to get to work. I incorporated sour cream and a couple of drops from 3 King’s Sauce created by Big Red’s Hot Sauce. And voila, you got yourself a perfectly creamy and spicy sour cream to top your nachos.


The perfect Chorizo Nacho


Now throw those tortilla chips into the oven or air fryer topped with your favorite cheese. I decided on a 4 Mexican Cheese Blend. Once that cheese is melted take all of those toppings and get to decorating. After all of those steps, we have created, what I think, is one delectable plate of nachos. Here you have the perfect single chip with all of the components we made. The roasted tomatoes were the perfect thing to come to bring a touch of sweetness when things got heated. The sauce brought a nice bit of heat to compliment the chorizo as well. I believe things tend to taste better when you put in the work yourself. But in my heart, I know these were amazing nachos!


Ingredients for a cocktail


I mixed things upon you, didn’t I? I usually go for a refreshing cocktail first. For all of those that remember reading my very first Make Your Own Happy Hour Adventure, you might remember the Maybe a Lemon Drop? Well, I figured we should make a real Lemo Drop this time around. So before your eyes, you can spot Vodka, Triple Sec, Simple Syrup, and Lemon Juice. The Lemon Juice is freshly squeezed and the Simple Syrup was made by yours truly. Simple syrup is quite easy to make, it’s two parts sugar and one part water. Boil up some water in a pan, pour in the sugar, mix it all together until you can’t see any sugar particles. Easy peasy lemon squeezy.


Sugar Rim


In my dad’s typical fashion I decided to go for a sugar rim on the glass. Swirl your glass in a bit of simple syrup to coat the rim. Then dip your glass into some sugar and you have yourself a sugared rim.
For the cocktail you will need the following ingredient measurements:
  • 2 ounces of vodka
  • ½ ounce of triple sec
  • 1 ounce of simple syrup
  • 1 ounce of fresh lemon juice
Combine all of these ingredients into your shaker with some ice and get to shaking!


Lemon Drop


Look it that Lemon Drop nestling among nature. My dad was definitely the one that got me hooked on Lemon Drops. It is just a perfect blend of alcohol and those citrusy notes from the fresh-squeezed lemons. This is perfect for anyone that loves a good amount of booze all while being sweet enough to enjoy.
Another Make Your Happy Hour Adventure to the list. There is something truly awarding when you put in a lot of work and effort to create an amazing meal. Well, in this case, Happy Hour, but it was enough to be a full meal. Again just hoping everyone out there is staying safe and healthy during these times.   1. These nachos look AMAZING! I think we're going to try and make chips tomorrow for Cinco de Mayo! Oh, and THANKS, you've hooked me on lemon drops!

    As far as our air fryer, we've used it from reheating our leftovers (fries), and we've even made CHEESECAKE in it!
