I decided to do something a little different. Since it is becoming more and more difficult finding restaurants open or are serving Happy Hour I created my own Happy Hour. I know that when one thinks of Happy Hour it is an escape from work, not something that involves more work. Well, you’d be surprised at how easy it is to make the food and drink in this Happy Hour.


View from Home Office


First of all, since a majority of us are working from home I wanted to show off my view from my home office set up. I would seize this scene any day of the week rather than my enclosed cubicle with no window.


Entertainment Center
Every house must have some sort of entertainment escape, so this is mine. I have a decent-sized television set up with two posters of some of my favorite things in life Disney and Star Wars. Most of my time has been either here or in my work area.


Dining Area

Of course, Happy Hour would not be complete if one did not have anywhere to dine at. I am currently using the kitchen table as my desk for my home office but luckily I just brought in the patio table inside.


Ingredients for Cocktail


I didn’t really get a recipe for this cocktail that I’m about to show you, but sometimes you have to be creative. All you need is lemonade, your favorite vodka, Triple Sec, and a lime. I’m realizing I could have easily made a lemon drop martini. To create this cocktail you will need a jigger or anything else that you have to measure out ounces. If you do have a cocktail shaker in your humble abode then that would be helpful, but not necessary. 
Maybe a Lemon Drop?
  • 2.25 oz of vodka
  • 0.75 oz of Triple Sec
  • 3 oz of lemonade
  • Juice of a quarter of Lime
  • A quarter of lime for presentation
  • Ice


A squeeze of lime


Pour all the liquid ingredients into your cocktail shaker with one ice cube. Then squeeze that quarter of a lime into the mix. Now enclose that shaker and get to shaking! If you don’t have a shaker you could just pour the contents straight into the glass and stir. Although I don’t think James Bond would approve.

In your fanciest glass put some ice, spherical if you want to be extra. Now pour that concoction into your glass. Cut a little in the middle of that other quarter of a lime and place it onto the side of the glass.


Maybe a Lemon Drop?


There you have it, fellow Happy Hour Adventurers! The Maybe a Lemon Drop? I was honestly surprised the glass I picked was the perfect size for the drink that I concocted. It was actually quite refreshing! The addition of lime juice added an extra bit of citrus flavor. I personally would have preferred to have had a little more vodka. So feel free to take and add the other ingredients to get the cocktail of your dreams.


Fresh Jalepeños


Now off to the food portion of this Make Your Own Happy Hour Adventure! I scoured through Tasty, one of my favorite foodie sites, and came across three-ingredient appetizers! This appetizer, in particular, were bacon-wrapped Jalapeño Poppers! I guess the recipe is all based on how hungry you are. In my case, it was based on how much bacon I had leftover.
Bacon-Wrapped Jalapeño Poppers
  • 2 Jalapeños
  • 4 slices of bacon (my case three)
  • Cream Cheese (my case buffalo cream cheese)
What you will do is cut the top centimeter off. Enough to get the stem off. Then you will cut them in half hot dog style or longways. After that, you will take a spoon to dig out all the seeds from the inside.


Buffalo Cream Cheese Dip


Grocery stores in my area always seem ransacked every time I go to obtain any sort of sustenance for myself. There was absolutely no cream cheese whatsoever. Not sure why all of a sudden everyone requires cream cheese, but what is one to do. Be creative! That’s what one needs to do nowadays. I scanned the dairy section and came upon some buffalo cream cheese dip.

All you have to do is scoop in a little bit of that cream cheese to fit within the crevises of the hollowed-out jalapeño.


Bacon is wrapped and ready to cook


Now it is time for the most delectable part of this dish, the bacon! Who’s mouth doesn’t start watering whenever they get a whiff of that amazing bacon scent in the air? All you have to do is wrap it around the jalapeño. Now it is time to cook them up. I received a wonderful gift from my grandparents this past Christmas, an air fryer. I love this thing so much and have been using it non-stop. But don’t worry you don’t need an air fryer to make these. You can set your oven to 400 degrees Fahrenheit and let them cook for 20 minutes. In my case, the air fryer had the bacon nice and crispy after 15 minutes, so just keep an eye on it.


Bacon-wrapped Jalepeño Poppers

For the aioli dip, I just moshed together a bunch of different ingredients with no actual measurements. It was a mix of mayo, garlic powder, red pepper flakes, Red Beard’s seasoning, and red rooster hot sauce. It came out as a nice spicy aioli that paired well with the bacon-wrapped jalapeño poppers. I only made this dip because I didn’t have any ranch, so as I keep saying you have to be creative.


Bacony Goodness


I do have to say these were truly amazing. The freshness of the air fried jalapeño brought about a nice charred pepper flavor. The creaminess and the heat of the buffalo cream cheese was a nice alternative to regular cream cheese. In the end, it all comes back to the bacon, which added that salty crunch to each and every bite.
There you have it! The Make Your Own Happy Hour! Just because you are stuck in the house does not mean you can’t create a little Happy Hour Adventure in the comfort of your Home Sweet Home.
